BBQ Bacon Chicken Breast

   This a recipe I adapted from the Pioneer Woman. I made it a little heart healthier by not searing the chicken in the bacon grease. And changed up the marinade. It was very easy and turned out quite tasty! I have had a similar recipe at Longhorns, and this was just as good! You can use whatever BBQ sauce you like. We like Sweet Baby Rays. If your chicken breast are very thick, you can use wax paper and a hammer to thin them out and cut them half into. I like them thinner so they cook more evenly. 



BBQ Bacon Chicken Breast:

3-4 Large Chicken breast (or 6-8 small pieces)
1 cup BBQ sauce
1/4 cup vinegar
Bacon
Shredded Cheese

Marinate chicken in BBQ and vinegar several hours. Fry bacon, until almost crispy. Set aside. Pan seer chicken on med-high 2-3 mins per side, until just starting to blacken. Chicken will not be fully cooked. Place on a well greased baking pan. Top each breast with bacon and a sprinkle of shredded cheese. Bake 10 mins at 400 degrees until cheese is melted. Serve hot. Enjoy!




Using a hammer to pound the meat out was quite refreshing :) 


Marinade the meat several hours in BBQ sauce and vinegar.




Fry several pieces of bacon, don't over cook, you will be baking in the oven.


Seer meat for 2-3 mins per side until a black, crisp outside is attained.



The meat should not be fully cooked, but the outside should be slightly blackened. Place on greased cookie sheet.


Top with bacon and sprinkle with cheese. 


Bake for 10 mins at 400 degrees, until cheese melts.
