Pancake Muffins for breakfast!

What better to eat for Saturday morning breakfast than pancakes? But, what happens if you don't WANT to cook pancakes for breakfast on a Saturday morning? Well, you just pour the batter in muffin tins, top with your favorite pancake mix-ins and put it in the oven at 350 for 15 mins. They were amazing! We made a few chocolate chip (that's my kids favorite), and few banana (that's Mommy's favorite) and some plain for Daddy! I sliced them open after I pulled them out of the oven and added butter. They were delicious! We will definitely be making this Pancake Muffins again!

Cornflake Night!

If you coupon (or even if you don't) you may have some extra boxes of Cornflakes in the pantry. So last nights dinner theme was Cornflakes! I made Ranch Chicken with shells and cheese and green beans. The Ranch Chicken was FANTASTIC! Best. Ever. The recipe was easy, I made a double recipe of the original and tweaked the cheese a little. Ranch Cornflake Chicken:

10-12 Chicken Strips (thawed)
6 tablespoons (2 packs) Hidden Valley Ranch Dry Mix
1/2 cup Parmesan
1/2 cup Shredded Mozzarella
1 stick butter melted

Preheat oven to 350. Mix together Corn Flakes, Parmesan and Ranch packet. Cut the chicken in half, dip the chicken in the melted butter then in the corn flake mixture and place into baking dish. Pour the remaining butter on top and bake for 45-50 minutes uncovered. Enjoy!!













Dessert, while I was at it with the cornflakes, consisted of.. you guessed it! Cornflakes! I found this recipe in the comments of the original recipe I was looking at while making the Ranch Chicken. I changed it up a bit, and they turned out great! Ease: **** Taste: **** 

Peanut Butter Chococlate Corn Flake Drop Cookies:
4 Cups Corn Flakes
1 bag Chocolate Chips
1/4 cup peanutbutter

Melt chocolate chips and peanut butter together in the microwave in a large glass bowl-heat 15 sec then stir & repeat until melted, add the corn flakes one cup at a time.
 (I put in as much as can get coated with the melted mixture-to cut down on sugar)-
drop by tsp on a cookie sheet sprayed with Pam -or you can put loosely in 9×13 & break a part. I used wax paper sprayed with pam!

Adventures in Dinner

I am excited to try new recipes for dinner every night! I love Pinterest. I must admit that it is quite possibly my favorite website, next to Facebook of course. I have been cooking exciting, new dinners every night for the last few months thanks to Pinterest. Some recipes turn out great! Some need some tweaking. Other recipes I try are just flat out gross! I would love to share with you a few recipes I have tried lately and how they turned out! I will rate each one with stars on taste and ease. The more stars the better!

I followed this recipe exactly as the instructions said, however I did pull it out of the oven about 5 minutes earlier than the time said, and it turned out wonderfully! Not very flavorful, but I enjoyed it and the kids liked it as well. Only complaint- Maggie said she didn't like the soggy bread (the biscuits). Blogging Again

Well, after some debating with myself, I decided that I would start my blog back up. I have several reasons that I wanted to start back. The first reason is simply to tell stories of our family and life for my children to look back on. The second reason is the fact that I love cooking dinner for my family and I would like a place to share my adventures in cooking! Third, the rest of my family blogs frequently, and I am a little jealous! So, there you have it! I am back to "Blogging Again"

Hello from the Hawkins





It's been almost a year now since the last family post! Things are good in our home. Carter is in first grade at Pike County and he is six years old Maggie started Pre-K at Pike Acadamy and she is four. Jada turned one in April and stays at home with Mommy and helps out on the farm!

Update...





It seems rather difficult to post lately- three kids, the farm, marriage... you get the picture! The kids are all doing well. Jada will be 6 months old on the 13th and Carter started Kindergarten Aug. 7th. Maggie has too many things to list!! She is in her own world most of the time.
