Cornflake Night!

If you coupon (or even if you don't) you may have some extra boxes of Cornflakes in the pantry. So last nights dinner theme was Cornflakes! I made Ranch Chicken with shells and cheese and green beans. The Ranch Chicken was FANTASTIC! Best. Ever. The recipe was easy, I made a double recipe of the original and tweaked the cheese a little. Ranch Cornflake Chicken:

10-12 Chicken Strips (thawed)
6 tablespoons (2 packs) Hidden Valley Ranch Dry Mix
1/2 cup Parmesan
1/2 cup Shredded Mozzarella
1 stick butter melted

Preheat oven to 350. Mix together Corn Flakes, Parmesan and Ranch packet. Cut the chicken in half, dip the chicken in the melted butter then in the corn flake mixture and place into baking dish. Pour the remaining butter on top and bake for 45-50 minutes uncovered. Enjoy!!













Dessert, while I was at it with the cornflakes, consisted of.. you guessed it! Cornflakes! I found this recipe in the comments of the original recipe I was looking at while making the Ranch Chicken. I changed it up a bit, and they turned out great! Ease: **** Taste: **** 

Peanut Butter Chococlate Corn Flake Drop Cookies:
4 Cups Corn Flakes
1 bag Chocolate Chips
1/4 cup peanutbutter

Melt chocolate chips and peanut butter together in the microwave in a large glass bowl-heat 15 sec then stir & repeat until melted, add the corn flakes one cup at a time.
 (I put in as much as can get coated with the melted mixture-to cut down on sugar)-
drop by tsp on a cookie sheet sprayed with Pam -or you can put loosely in 9×13 & break a part. I used wax paper sprayed with pam!
