Labor Day Pies

In celebration of Labor Day, we will be cooking with my family (as we do for every occasion). We will indulge in deep fried hot wings, mashed potatoes and baked beans! I chose to make 2 different kinds of pies for the night! One being a family tradition, handed down from my Grandmother, the other is a long time favorite of mine...although this is the first attempt I have ever had at making it! So, here are the pictures and recipes of two yummy pies that turned out wonderfully!

Frozen Lemon Pie

5 Eggs, separated
2 cans of Eagle Brand Milk
1 Cup Lemon Juice
Graham Crackers and Butter for crust

Crack eggs, placing the whites into a large glass mixing bowl and the yellows into another large glass mixing bowl. Beat the whites with a hand mixer until they peak. In the other bowl, stir the egg yellow and lemon juice together, add in both cans of condensed milk and stir until mixed well. Fold in the egg whites to lemon juice/ condensed milk/ egg mixture. Mix well. Pour into pie crusts with graham cracker/butter crust. Sprinkle a few graham crumbs on the top.  Makes 2 pies.  Immediately cover place in freezer. Needs to be in the freezer for at least 6 hours before serving.

Peanut Butter Pie

Taste ****

1 Cup Peanut Butter
1 Package Soft Cream Cheese
1 Cup 10x powdered sugar
1 Can Eagle Brand milk
1 8oz. container of thawed Cool Whip
Graham Crackers/Butter
Chocolate Syrup to drizzle on top

Mix peanut butter, cream cheese, and powdered sugar with hand mixer until well mixed.
Mix in the Eagle Brand Milk. Continue with hand mixer until all ingredients are combined well. With a spatula, fold in the cool whip and stir well. This will make enough for 2 pies. Mix crumbled graham crackers with butter and place in bottom of pie tins. Pour mixture in pie tins, drizzle chocolate syrup on top and cover. Refrigerate for at least 6 hours.
