Stuffed Twice Baked Potatoes

I found a few recipes for twice baked potatoes and kind of made my own. They turned out really good! We get tired of the same side items, so I like to find new ways to dress up the same sides (potatoes)... This was fairly easy and most importantly, gave us a new way to eat potatoes! 


Stuffed Twice Baked Potatoes:
Ease: *** Taste: ****
6-8 potatoes
1/4 cup milk
1/4 cup sour cream
1/4 cup parmesan
1/2 teaspoon salt
1/2 teaspoon pepper
1 Tbs Butter
Topping: 1/2 cup shredded cheese
              1/4 cup bacon bits.

Rub potatoes on oil and sprinkle with salt. Wrap in tin foil and bake potatoes for 1 hour in oven. Remove and allow to cool for 15 mins. Slice potatoes in half and scoop out insides. Leave a little potato on the skin. Mash the scooped out potatoes in a bowl and add all ingredients and mix well. Spoon potato mix back into potato skins. Sprinkle with shredded cheese and bacon bits. Return to oven for 20 mins at 375 degrees.







Cook potatoes for 1 hour in oven.


Split potatoes half into. Allow to cool for 10-15 mins.


Using a teaspoon, scoop out inside of potatoes, leaving about 1/4 inch still on skin.


Mix all ingredients with potatoes and mash in separate bowl.



Sprinkle with cheese and bacon and bake.


Potatoes are done when cheese is melted on top.


All done!
