Chicken Bacon Ranch Penne Pasta

This was adapted from a Weight Watchers recipe that used lighter versions of the milk, cheese and pasta. I chose to use regular ingredients. It was VERY yummy!! This will definitely be cooked again at our house!





Chicken Bacon Ranch Penne Pasta:

8 Chicken Tenders (cut into bite size pieces)
1 lb. Penne Pasta Cooked
5-6 Slices of bacon
1 Tbs. Bacon Drippings
1 Tbs. butter
2 Tbs. flour
1 Package Ranch dry ranch mix
2 cups milk
1 cup shredded cheese
Parmesan cheese to taste

Fry bacon. Remove bacon, crumble up and save for later. Reserve 1 Tablespoon of the bacon grease and drain the rest. Return the grease to pan and add butter and chicken bites. Season with salt and pepper. Brown chicken. Sprinkle ranch dressing mix and flour over chicken. Stir and coat the chicken. Add in milk. Heat until thick and bubbly. Add in the cup of shredded cheese (whatever kind you like). Taste and season more if needed. Add in half the bacon and stir. Boil noodles and drain. Mix the two together and top each serving with a little of the crumbled bacon and parmesan cheese! Enjoy!


Fry the bacon.


Add the chicken and butter to the bacon grease.


Boil penne noodles.


Brown the chicken.


Add ranch and flour.


Coat the chicken.


Stir in milk and cook until thick and bubbly.



Add in shredded cheese.


Add in bacon crumbles.



Mix the chicken and noodles. Top with bacon and parmesan cheese!

Looks yummy!!! I am going to try the low calorie version and use whole wheat pasta. I bet it would be good with bowtie pasta and shrimp as a variation! Love your blog!!!
